I would throw a pork butt and some ribs or a brisket on the big Weber. And show them how to build a snake for Minion method for longer smokes. Maybe precook one of each so they can see and taste how they turn out. I would also throw some wings and drums one the smaller Weber. To show them how the volcano works. You could also marinate a Spatchcocked chicken to show them hot and fast cooking. This could also be done on the gasser. In fact some of the same things could be cooked on the Weber and the gasser, so people can choose which is the right rig for their yard.


A quick lesson on side dishes, baked beans, slaw or potato or macaroni salad, homemade bbq sauce, simple rubs, and how you brined your chicken or injected your butt or brisket.

Maybe some baked apples with apple pie spices, some butter with brown sugar, and pan biscuits and a scoop of vanilla ice cream topped with whipped cream for dessert.

Keep things simple most people don't have time, or the intrest in becoming a pit boss, they just want to provide good food for friends and family.

How long is each class? Pork butt would be way too long unless you precook as Sal says do two and start one hours before the class starts but quick marinated stuff would be fine. Post cooking cleanup is mandatory so they can properly learn how to!

I love grilled lamb chops. Used to catch them on sale at Kroger pretty regularly. Rub some pesto on and grill rare over really hot coals. When he was little my son would chew the bones on his and ask for ours.

Would probably help to have a "quality ingredients selection" class prior to a grilling class. Most people mess up at the market making poor food quality selections way before they ever make it to the grill

"Class" was probably a poor choice of words---seminar is more accurate. It'll just be a Sunday afternoon for an hour or so, couple of hours tops.
