Do you add any corn starch to it to keep it from clumping up, or is that not a problem with this mix?

No, I have never done that.

Add 1/1 spice mix and brown sugar makes a pretty decent BBQ rub, too.

Opposite of skin side slice speck almost all the way through. You can leave skin on or take off. You will need cheese first I like fontina but sharp cheddar is great or whatever. A couple fresh sage leaves. Prosciutto. Extra virgin olive oil and whatever rub or seasoning you like. This is great with Montreal Steak Seasoning. On the bbq open face side first cook til prosciutto is crispy flip and cook other side. Done.
Make sure you toothpick specks shut before you cook too.

Goes great with crab if you like the surf and turf thing......
