I know this should be in the recipe forum, but it doesnt get much traffic.

What is everyone's favorite squirrel recipe's?

Everything I've tried in the past has always come out tough. 20200106_104146.jpg

My hands-down, all-time favorite was 'Granny's Squirrel Gravy and Dumplings. She pressure-cooked a couple Squirrels and picked the meat off the bones. The meat was combined with dumplings/gravy in some manner I was never able to master. The only time I tried it, the gravy was the consistency of wallpaper paste. Not even the cat would eat it...
I'm telling you... done right... it's magnificent.

I take the easy route. Instant Pot -- Squirrels, about of cup of stock and 30 minutes... Tender When I'm a little more ambitious - add the squirrel to some mushroom soup and some rice. All good.....

I cut the squirrels into 5 pieces, Mother would brown them in iron skillet and then pressure cook them, she would debone them and make gravy with the leavings in the skillet and would make a pan of biscuits. There is no game I would eat rather than squirrel fixed this way. Back in the day I could eat 4 of the little tree rats. Writing this makes my mouth water.

Oh how I miss eating squirrels like this. Used to shoot fox squirrels with a .45 muzzleloader and bring them in for gravy and biscuits. Eat until your sides hurt.
