Someone on here turned me onto chakka marinade and that is what I mostly use for waterfowl now. Debone ducks in half, place in platter, pepper, minced garlic, chakka sauce. Better duck only needs a couple hours to soak, spoony, cinnamon teal, etc can go overnight.

Was gifted a few shanks from a friend who was gonna toss em to the dogs.
My first time ever messing with shanks and I'd heard good things about ossobuco, so I figured what the heck.
Smoked on the traeger for 1hr and finished the last 2.5hrs at 225 covered in mustard peppercorn sauce.
Looks can be deceiving as this dish came out absolutely incredible.
