This ole contraption is 30 years old.
It was used in a test lab, 316SS 14gauge.
I add ceramic insulation and sheet metal wrap. A damper vent in the bottom, and a V shaped perforated sheet metal fire box.
There is a thick cast iron plate on the first rack used as a diffuser when offset cooking,
Or a blacking plate when needed.
100% wood fired or charcoal.
Whole ham and turkeys, to smash burgers and fish.
There is a Relationship and Understanding
