The best damn duck I've ever made, and I cannot recreate it for the life of me. This is widgeon, cooked whole. Probably the best duck dish I've made, it was gone in short order.
Made it last year but forgot the damn recipe, the Sapporo made me do it.
That skin looks like Peeking Duck Steve!
We had a little hole in the wall place in China Town (LA) where we could buy PKD 2 or 3 at a time. Went about once a month to get our fix. Sheet is absolutely awesome with a good plum sauce:tu
