    Hi all :)
    I’ve been on a salumeria frenzy of late. :cool:
    Got me wondering: wild turkey salumeria/charcuterie/cured stuff....
    Anyone do this? If so, please share (with recipe). Thanks! :tu

    I’m thinking corned. Hate to waste a turkey breast, which is why I’m asking. :)

    turkey jerky
    Will let you all know how it comes out
    (Next project: goose and turkey leg tacos)

    Winner!
    If I was to change anything, I’d double the soy and bump the Worcester sauce by 1 tbs.
    Jerky is moist, less chewy than beef and tasty.
