I have used my Buck 321 bird knife since 78 but also used a Schrade Sharp Finger for the heavy work. The Buck 110 served me for decades too. I gave my 110 and Sharp Finger to the grandkids but use the 321 every day. The gut hook is nice for waterfowl. The 321 is small enough for everyday use and carry.
Puma Skinner. Saved up $40 when I was 14. Still use it every deer season. knife and sheath both have lasted the test of time.
I have 3 favorites. Bird knife is a L.T. Wright Deer knife is a Bark River I don’t want to use knife is a custom Matthew McAlevy.
If I like a knife it goes in the gun safe - if I use a knife, no matter how much I like it, it eventually goes into a black hole or alternate universe never to be seen again.
I currently have a pair of Havalons that I managed to not lose in over a year (almost a record) but they do use the disposable blades. However, I do like the Gerber paraframes as they are relatively cheap so no tears when they enter the 6th dimension
