Tips on vacuum sealing fish?

Are there any tips I need to know before I try to vacuum seal some fish (cod & salmon-not frozen) I bought at the Supermarket yesterday? Thx!

I would recommend wrapping the fish with a couple wraps of plastic wrap first. It will freeze tight to the fish and keep air off of it, even if the vacuum on the bag breaks while in the freezer and lets air in. Then lay the fish on a cookie sheet and freeze solid. Then vacuum seal. If you vacuum seal them before being frozen, it’ll suck the moisture out of the fish. Always puncture the bag before you defrost to break the vacuum.

Another way is to freeze the fish solid first. Then dip in water and freeze again two separate times. Then vacuum seal. The ice on the outside of the fish acts the same as the plastic wrap. Just takes a lot longer.

Salmon flesh is soft and doesn’t freeze well in water. The best results I’ve had with freezing salmon is to cut it into portion size pieces, take two matching pieces and place them flesh to flesh. Then wrap it as tightly as possible in 5-6 turns of plastic wrap. No vacuum. It’ll last 5-6 months like that.
